Spinach and Fruit Salad with Avocado Citrus Dressing

A great way to introduce veggies for the veggie-shy family members. Kids can help prepare this fruity salad.

Ingredients
  • baby leaf spinach 2 cups
  • tangerines 2
  • pink grapefruit 1/3
  • blueberries 1/2 cup
  • strawberries 1/4 cup
  • avocado 1/2
  • Fresh orange juice 80ml
  • honey, liquid 1/2 tbsp
  • vinegar 1/4 tbsp
  • vegetable oil 1 tbsp
  • table salt 1/2 pinch
  • black pepper, ground 1/2 pinch

Preparation

    Wash spinach and fruits and drain excess water separately.

    Slice grapefruit segments remove seeds and slice the strawberries. In large bowl combine spinach, tangerines, grapefruit, blueberries and strawberries.

    Place avocado, orange juice, honey, vinegar, vegetable oil, salt and pepper into a blender or bowl and whisk until smooth and creamy.

    Pour over salad and toss well.
