Baked sweet potato and vegetable pakora

    Ingredients

    Onion, red, grated

    20 g

    Onion, white, thinly sliced

    100 g

    Sweet potato, steamed, mashed (well drained)

    500 g

    Green Onion, finely chopped

    5 g

    Peas, cooked

    80 g

    Spinach, finely shredded

    60 g

    Cumin, ground

    2 g

    Coriander, ground

    30 ml

    Masala Spice

    3 g

    Maggi Sweet Chilli Sauce

    40 ml

    Salt, fine

    5 g

    Maggi No Oil Dressing French

    30 ml

    Method

    1. In a large bowl combine the red onion, white onion, sweet potato, green onion, peas, spinach, spices,  sweet chilli sauce and salt. Mix until just combined taking care not to crush the peas too much.
    2. Portion into equal portions and place on to a baking sheet.
    3. Refrigerate for 10 minutes.
    4. Pre-heat the oven to 200°C.
    5. Brush the pakora bites lightly with the Maggi no oil dressing.
    6. Bake for 15-20 minutes until golden brown.
    7. Allow to stand for 10 minutes before serving.
